How to Make Apple Cider at Home

Home Made Apple Cider Doughnuts |
Fresh apple cider doughnuts are a popular attraction at cider mills around the
country, but why wait for fall to indulge? Enjoy this delicious treat at home
all year long by following this simple recipe. Make sure to top off your home
made apple cider doughnuts with a decadent frosting, glaze, or topping!

1 cup apple cider |

3 ½ cups flour |
|
2 tsp baking powder |
|
1 tsp apple pie spice |
|
½ tsp salt |
|
4 tbsp margarine |
|
1 cup granulated sugar |
|
2 eggs |
|
½ cup milk |
Reduce the apple cider to ¼ cup in a saucepan over a low flame, and then set
aside to cool. Combine the margarine, sugar, and eggs and stir until creamy.
Blend in the reduced apple cider and milk. In a separate bowl, combine the
remaining dry ingredients and stir until thoroughly mixed. Gradually add the
flour mixture and continue stirring until the dough forms a ball. The dough
should be firm and dry; if the dough is too soft and wet, it will come apart
during frying and make a mess.
Dust a sheet of wax paper with flour and and begin rolling the dough
out into a flat sheet approximately 1/2 inch thick. It is a good idea to
flip the dough several times during rolling to ensure the bottom isn't becoming
stuck to the wax paper. If you don't have a doughnut or biscuit cutter,
you can use the mouth of a cup to
cut our your apple cider doughnuts (then you just have to find a way to cut out the holes). Place the
doughnuts aside for 15 to 20 minutes; this is a great point to start warming up
the fryer.
Heat your deep fryer (or a pot with at least 3” of oil) to 350°. Gently transfer
the doughnuts to the heated oil one at a time. Allow each doughnut to cook for
60 to 90 seconds before turning and cooking for an additional 60 to 90 seconds.
Remove the golden brown apple cider doughnuts from the oil and place them on a
cookie sheet covered with paper towels.
These treats are tasty plain, but they are absurdly delicious when they are
topped with something sweet. A light dusting of confectioner’s sugar is a quick
and easy way to top your apple cider doughnuts. Drizzling caramel syrup over the
confectioner’s sugar will turn your simple home made treat into a gourmet
pastry. Another option is to mix ½ cup sugar with 1 tsp of ground cinnamon and
place it in a small paper bag. Doughnuts are placed into the bag and gently
shaken to distribute an even coating. |
